When you’re ready for pizza night, simply thaw out the ingredients & dough in the fridge, proof the dough at room temperature for at least 1 hour, and stretch, top and launch your pizza into the oven for both an unforgettable and convenient pizza experience.

Tip: Need dough thawed and ready to go for pizza night ASAP? Simply pull dough balls out of the freezer, place them into an airtight container, and leave them to thaw at room temperature for approx. 4 hours.

Neapolitan Dough

Our preservative-free Neapolitan dough balls are flash-frozen to lock-in freshness and are made with the finest ingredients: Fresh yeast and Caputo 00 Pizzeria Flour, the gold standard for Neapolitan pizza dough. Contrary to regular all-purpose flour, Caputo 00 Pizzeria Flour is high in protein, making it prime for pizza ovens with high-heat output. Its finely-milled content forms high-quality gluten that creates an elastic dough that's easy to stretch, heat, and sink your teeth into its pillowy crust.

Carmelina San Marzano Pizza Sauce

An artisan-crafted tomato sauce recipe that brings the flavors of Italy into your home. Carmelina’s PIZZAMARINARA is made from 100% Italian San Marzano tomatoes, olive oil, high-quality herbs, and savory spices. The tomatoes are grown under the shadow of Mount Vesuvius in Italy, where the tomatoes flourish in the Mediterranean climate, and the region’s nutrient rich, volcanic soil.

Tip: We went light on the herbs & spices so that you could season-to-taste. It’s always nice to be the boss of the sauce!

Losurdo’s Fresh Mozzarella Cheese

Losurdo's fresh, wood-fired mozzarella cheese is made and inspired by family traditions dating back over 60 years. Authentically crafted from 100% whole cow's milk from upstate New York, you’ll get a delicate, smooth and creamy mozzarella ball that’ll melt perfectly over your pizza. Wood-fired means it’s lower in moisture content relative to other fresh mozzarella brands, which keeps you from a soggy pizza.

Warning: Avoid snacking and eating all the cheese before it goes on your pizza!

Ezzo’s Classic Pepperoni Stick

Pizza topped with meaty tradition. The Ezzo family has been making pepperoni in the USA for over 100+ years. Sticking to their deep-rooted traditions, Ezzo’s produces pepperoni the way all Italian pepperoni should be made: real ingredients encased in stick-form. Packed with authentic pork and beef, you’ll not only create a pie curated for a premium authentic taste, but a pie curated to your preferred pepperoni slice thickness.

Tip: Before cutting pepperoni into slices, cut 2+ inches, peel off casing, and then begin to cut into individual slices.

Tip #2: Casing is not edible and any white growth on the casing is completely normal for cured meats.

We recommend using the dough within 6 hours of removing it from the fridge. Dough will not go bad but yeast effectiveness will start to deteriorate.

Remove the desired amount of dough balls from the freezer to start the thawing process. Sprinkle flour in an airtight container and place the dough inside, keeping them 1-2 inches apart sprinkle additional flour on top of each dough ball before closing the container to prevent any sticking at the top.

We recommend an overnight thaw in the fridge; however, you can leave them at room temperature for approximately 4 hours for a quick thaw (remember that you do have other artisan ingredients from the kit to thaw). The longer you can keep the dough in the fridge post-thaw, the longer the dough can ferment, unlocking more flavor and an airier crust (no longer than 5 days in the fridge)

It’s pizza day! Take the container of thawed dough balls out of the fridge and place it on a countertop at room temperature. Let it rest for at least 1 hour before you plan on using the dough to allow proofing for optimal stretching. Best used within 6 hours, as the yeast’s effectiveness will start to deteriorate.

Nope! We took all the hard work out of pizza night. Our Neapolitan dough is balled into 9 oz. (250g) sizes, perfectly portioned to make 12-inch pizzas.

Neapolitan dough is best when cooked in wood-fired or gas ovens that provide temperatures over 750° F (400° C). An in-home, conventional kitchen oven at 550° F or higher will make great pizzas with our ingredients, but a high-heat pizza oven should be used for optimal results. We advise using our Pi ovens designed for the modern pizzaiolo, but any backyard pizza oven will deliver a high-quality pie using this kit.

Yes! Though Neapolitan dough is best cooked in a high-heat oven, such as our Pi ovens, kitchen ovens at a temperature of 550° F (285° C) heat or greater will still produce incredibly delicious and artisan-style pizzas. For optimal results, we recommend preheating and baking on a pizza stone or steel in your kitchen oven, coupled with our Pi Bamboo Peel (for launching and serving) and our Pi Stainless Peel (for retrieving pizza out of the oven).

Simply pull from the freezer the portioned amount of ingredients you think you will need for your next pizza night and thaw in the refrigerator (best when done overnight).

We recommend: (1) 16 oz. mozzarella ball for 4-5 pizzas; (1) 8 oz. San Marzano tomato pizza sauce pouch for 3-4 pizzas; Pepperoni to your liking.

Zero. Zulch. Nada for our artisan dough, cheese and sauce. These products are made fresh so that you can not only serve the freshest pizzas, but also feel good about eating them. Our artisan Ezzo’s pepperoni is made with Sodium Nitrate, a common shelf-life and flavor preservative used in a majority of processed meats.

All of our ingredients and dough are produced in either USA or Italian-based kitchens. Traditionally only sold to non-chain pizzerias, the brands of these ingredients / dough and brands are available to the home-based “pizzaiolo'' for the first time!

Ezzo pepperoni: Produced in the kitchens of Ezzo, a family-owned business based out of Ohio (USA). The Ezzo family has been perfecting their pepperoni-making craft for over a 100 years. Now that’s history and passion that we guarantee you can’t find in a grocery store bag of pepperoni.

No, do not refreeze any of the ingredients after they have been fully thawed.
