Raspberry Chocolate S’mores

While s’mores will always be a classic with the combination of graham crackers, chocolate, and a perfectly roasted marshmallow, this twist elevates the timeless treat.
Use the chocolate cookie recipe below to create your base ahead of time. You can also buy chocolate cookies instead if you prefer. Gather friends and family in the backyard or on the deck around your Mesa tabletop firepit and put together a platter of ingredients that’s sure to impress. Once you’ve roasted a marshmallow just the way you like it, layer it between chocolate cookies with fresh raspberries and dark chocolate for the ultimate flavor combination.

Ingredients
For the cookies:
1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 cup flour
1/2 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
For the s’mores:
Marshmallows
Squares of dark chocolate
Fresh raspberries
Directions
Step 1: Mix the wet ingredients

Preheat your oven to 350 degrees. In a bowl with a hand mixer, or the bowl of a stand mixer, cream the butter and sugars. Mix in the egg.
Step 2: Add the dry ingredients

In a separate small bowl, whisk together the flour, cocoa powder, baking powder, and salt. Mix the dry ingredients into the butter mixture, mixing until the dough comes together. Use your hands to bring the dough together to form a ball.
Step 3: Chill the cookie dough

Flatten the ball of dough into a round and sandwich it between two pieces of parchment paper. Roll the dough out to ¼-inch thick and place it on a baking sheet. Transfer the baking sheet to the freezer for 10 minutes to chill.
Step 4: Cut and bake the cookies

Use a cookie cutter or the mouth of a glass to cut small circles out of the chilled dough. Place them on a greased or lined baking sheet. Bake the cookies for 8-10 minutes. Once baked, remove from the oven and let the cookies cool on the baking sheet.
Step 5: Prep the berries

In a small bowl, mash the raspberries with a fork. Set aside until you’re ready to make s’mores.
Step 6: Make the s’mores

Light a fire in your Mesa or Mesa XL tabletop firepit. Of course, you could also use another size to roast your marshmallows including Bonfire, Ranger, or Yukon. Roast a marshmallow and assemble your s’mores. Use a chocolate wafer cookie as the base, spread with raspberries, add a piece of chocolate on top, and add your roasted marshmallow. Finish it with another chocolate wafer cookie.
