Campground Corn Chowder

Our easy to make, incredibly savory corn chowder combines everyone’s favorite starches with just enough spice to please every camper’s palate.

Ingredients

Corn on the Cob

Russet Potato

Red Onion
1
Green Onions
3
Garlic Clove
1/2
Vegetable Stock
1q
All Purpose Flour
2tbsp
Olive Oil
5tbsp
Bay Leaves
2
Cream
1/2 Cup
Salt
1tsp
Black Pepper
1/4tsp
Red Pepper Flakes
To Taste

Directions

  1. Cut kernels off the cob. Dice the onion and potato, then slice the green onion and mince the garlic.
  2. Put the pot on solo stove and add olive oil.
  3. Sauté onions.
  4. Add garlic 5 minutes before onions are done.
  5. Add all-purpose flour and stir for another minute.
  6. Add corn, then gradually pour in vegetable stock and let it come to a simmer.
  7. Add potatoes, bay leaves, salt, pepper, and red pepper flakes. Simmer until potatoes are tender.
  8. Slowly pour in cream.
  9. Serve the soup and sprinkle with green onion, black pepper, and red pepper flakes.
